If you are looking for a healthy and deliciously delicious breakfast, we have the perfect recipe for you: fresh banana and blueberry bread! We offer you a tasty option that will satisfy your taste buds while respecting your dietary needs. Get ready to enchant your mornings with this recipe that combines the sweetness of bananas, the sweetness of blueberries and the delicate flavor of sweet olive oil.

Recipe: Banana Bread and Fresh Raspberries

(note that this recipe can easily be adapted gluten-free)

Ingredients :

  • 2 large ripe bananas, mashed (or 3 small)
  • 1/2 cup ofsweet olive oil from Olives et Gourmandises ***
  • 1/3 cup coconut sugar (date or maple sugar)
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup almond flour
  • 3/4 cup flour (gluten-free if you want a gluten-free version)
  • 1/4 cup coconut flour
  • 1 tablespoon of flaxseed powder
  • 2 teaspoons baking powder
  • 1 teaspoon of baking soda
  • 1/2 teaspoon salt
  • 1 cup fresh blueberries (frozen, also works in winter)

As an option, you can add chocolate chips (my favorite, Enjoy life chips). It will delight children and the chocolate goes so well with banana and blueberries!

***note that mild olive oil can easily be replaced by the one infused with lemon, to give a little “twist” to the recipe. Lemon and blueberries go so well together! On the other hand, I wouldn't put chocolate in it... I would make more of a blueberry sauce (Blueberries, a touch of sugar and a little water, boil in a cauldron, you will get a nice sauce!)

Instructions :

  1. Preheat your oven to 350F and grease a standard size loaf pan..

  2. In a large bowl, mix the crushed bananas, the sweet olive oil from Olives et Gourmandises (or the lemon-infused one), the coconut sugar (or date or maple sugar), the eggs and the 'vanilla extract. Beat until smooth and creamy.

  3. In another bowl, combine the almond flour, flour, flaxseed powder, baking powder, baking soda, and salt. Mix these dry ingredients well.

  4. Add the dry ingredients to the wet mixture and mix gently until everything is well incorporated. Be careful not to overmix.

  5. Add the blueberries to the batter. They will add a fruity touch to your bread.

6. Pour the batter into the prepared loaf pan and smooth the top with a spatula.

7. Bake in the preheated oven for about 45 to 50 minutes, or until a toothpick inserted in the center comes out clean with a few crumbs.

8. Once cooked, remove the bread from the oven and allow it to cool in the pan for a few minutes before removing it from the pan and transferring it to a cooling rack.

 

Gourmet tip: Serve this fresh blueberry banana bread with a spoonful of plain Greek yogurt and a few extra blueberries for a touch of freshness (or with the blueberry sauce!... it will be delicious!).
