  • 1 1/2 cups of unbleached all-purpose flour (Gluten-free if you need a version for celiac)
  • 1 tbsp ground flaxseed
  • 2 tsp baking powder

  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/2 tsp ground cardamom
  • 1/4 tsp ground nutmeg
  • 1/2 tsp salt
  • 1/2 cup brown sugar
  • 1 cup homemade or store-bought pumpkin puree
  • 1/2 cup Extra Mild Arbequina Olive Oil from Olive et Gourmandise
  • 2 eggs
  • 2 tbsp pumpkin seeds (for topping), or more if you want to add them to your mix... pumpkin seeds are so nourishing!


  1. Start by placing the rack in the center of your oven. Preheat the oven to 350°F. Take a moment to generously oil or butter a 9 x 5-inch bread pan. Personally, I use coconut oil. No need for flour or parchment paper, the bread comes out of the pan beautifully.

  2. In a bowl, combine the flour, ground flaxseed, baking powder, baking soda, spices (cinnamon, ginger, cardamom, nutmeg), and a pinch of salt. This fragrant mixture will form the base of your pumpkin bread.

  3. In another bowl, whisk together the brown sugar with the pumpkin puree, olive oil, and eggs using an electric mixer until the mixture thickens slightly.

  4. Gently fold the dry ingredients into this wet mixture, mixing until you have a homogeneous dough, filled with spicy aromas that evoke the golden autumn leaves. (This is the moment when you can easily incorporate an additional 1/2 cup of pumpkin seeds.)
