What could be better when summer arrives than a good pesto!!! But a good pesto usually contains cheese, and garlic. Garlic…. Yum. But a little garlic can cause a lot of stomach damage for those struggling with a irritable bowel syndrome . So here is an oh so delicious alternative!
Makes about 1 cup of pesto:
Ingredients:
2 cups fresh basil
1/3 cup unsalted sunflower seeds
1 tbsp nutritional yeast
2 tbsp fresh lemon juice
¼ cup garlic-infused olive oil (or mixed with a good olive oil if you want less garlic flavor).
Salt to taste
Process everything in a food processor or blender, until you get the desired consistency.
Nutritional yeast, the gold dust of vegans, gives it the taste of parmesan, while providing significant nutrients. It is a good source of fibre, amino acids and is particularly rich in vitamin B.
Garlic-infused olive oil, on the other hand, is how you can get the taste of garlic back, without the fructans, which cause bloating and discomfort for many people.
Basil is known for its digestive properties!
All good reasons to abuse it!
