Recipe for Millet, Mushrooms and Kale Gratin :

Ingredients : (for 6 to 8 servings)

  • 1 cup of millet
  • 2 French shallots, finely chopped
  • 200 g of grated Gruyère
  • 1 package of 454 g of mushrooms, sliced
  • 2 cups of kale, chopped
  • 2 tablespoons of olive oil (regular or butter-flavored)
  • 3 cups of hot vegetable broth
  • Salt and pepper to taste
  • 1/4 teaspoon ground nutmeg (optional)

Instructions :

  1. Preheat your oven to 180°C (350°F) for the ultimate gratin.

  2. Start by cooking the millet. Rinse it under cold water using a fine-mesh sieve. In a saucepan, heat the olive oil over medium heat. Add the finely chopped French shallots and sauté until they are lightly golden and fragrant.

  1. Add the millet to the pot with the shallots. Sauté it for a few minutes until it takes on a light golden color.

  2. Then pour the hot vegetable broth over the millet. Add a pinch of salt, pepper and ground nutmeg (if you wish). Bring to a boil, then reduce the heat, cover and let simmer for about 20 to 25 minutes, or until the millet is tender and the broth is almost absorbed.
