Lemon Cream Cheese Frosting
- 1/2 cup softened vegan butter
- 8 oz vegan (or standard) cream cheese
- 1/2 teaspoon vanilla extract (I like the organic version)
- 1 teaspoon of organic lemon juice
- 3 cups sifted gluten-free powdered sugar
Vanilla icing
- 3/4 cup softened vegan butter
- 1/2 teaspoon vanilla extract
- 1 teaspoon of organic lemon juice
- 2 cups sifted gluten-free powdered sugar
Mix the butter, powdered sugar, lemon juice and vanilla extract with a hand mixer until smooth and fluffy. Pour over the top of the cake.
Drizzle with coconut butter
For a lemon cake, simply pour coconut butter on top of the lemon cake.
