To frost a vegan cake properly (See the recipe forVegan Gluten Free Cake with Blueberries and Lemon), here are some vegan and gluten-free icing recipe ideas.

 

Lemon Cream Cheese Frosting

  • 1/2 cup softened vegan butter
  • 8 oz vegan (or standard) cream cheese
  • 1/2 teaspoon vanilla extract (I like the organic version)
  • 1 teaspoon of organic lemon juice
  • 3 cups sifted gluten-free powdered sugar
Use a stand mixer or hand mixer and mix together until smooth and thick.

 

Vanilla icing

  • 3/4 cup softened vegan butter
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon of organic lemon juice
  • 2 cups sifted gluten-free powdered sugar

Mix the butter, powdered sugar, lemon juice and vanilla extract with a hand mixer until smooth and fluffy. Pour over the top of the cake.


Drizzle with coconut butter

For a lemon cake, simply pour coconut butter on top of the lemon cake.
