Toast au pesto, tomates et fromage

At lunch, dinner, or simply as a starter, your taste buds will be delighted.

Portions: 2 toasts

INGREDIENTS

  • Thinly sliced heirloom tomatoes
  • Thin sliced yellow tomatoes
  • Balsamic Glaze
  • Fresh mozzarella or burrata of your choice
  • Homemade bread slices

For the pesto

  • 1 cup of basil
  • 1/2 cup salted cashew nuts
  • 1/2 cup of parmesan
  • 1 tsp black pepper
  • 1 cup of garlic olive oil

PREPARATION

For the pesto:

  1. To the food processor, grind the cashew nuts and parmesan.
  2. Add the basil and olive oil.
  3. Season and blend until smooth.
  4. For a creamier pesto, drizzle the olive oil.

For assembly:

  1. Toast your bread.
  2. Spread a generous layer of pesto.
  3. Spread the tomatoes and cheese.
  4. Finish with a drizzle of balsamic glaze.
