Toast au pesto, tomates et fromage

At lunch, dinner or simply as a starter, your taste buds will be delighted.

Servings: 2 toasts



  • Thin sliced heirloom tomatoes
  • Thin sliced yellow tomatoes
  • Balsamic glaze
  • Choice of fresh mozzarella or burrata
  • Slices of homemade bread


For the pesto

  • 1 cup of basil
  • 1/2 cup salted cashews
  • 1/2 cup of parmesan
  • 1 C. pepper
  • 1 cup ofgarlic olive oil



For the pesto:

  1. In a food processor, crush the cashews and Parmesan.
  2. Add the basil and olive oil.
  3. Season and reduce to a smooth puree.
  4. For a creamier pesto, drizzle in the olive oil.


For assembly:

  1. Toast your bread.
  2. Spread a good layer of pesto.
  3. Spread out the tomatoes and cheese.
  4. Finish with a drizzle of balsamic glaze.
