INGREDIENTS
- Thinly sliced heirloom tomatoes
- Thin sliced yellow tomatoes
- Balsamic Glaze
- Fresh mozzarella or burrata of your choice
- Homemade bread slices
For the pesto
- 1 cup of basil
- 1/2 cup salted cashew nuts
- 1/2 cup of parmesan
- 1 tsp black pepper
- 1 cup of garlic olive oil
PREPARATION
For the pesto:
- To the food processor, grind the cashew nuts and parmesan.
- Add the basil and olive oil.
- Season and blend until smooth.
- For a creamier pesto, drizzle the olive oil.
For assembly:
- Toast your bread.
- Spread a generous layer of pesto.
- Spread the tomatoes and cheese.
- Finish with a drizzle of balsamic glaze.
