Servings: 2 toasts
INGREDIENTS
- Thin sliced heirloom tomatoes
- Thin sliced yellow tomatoes
- Balsamic glaze
- Choice of fresh mozzarella or burrata
- Slices of homemade bread
For the pesto
- 1 cup of basil
- 1/2 cup salted cashews
- 1/2 cup of parmesan
- 1 C. pepper
- 1 cup ofgarlic olive oil
PREPERATION
For the pesto:
- In a food processor, crush the cashews and Parmesan.
- Add the basil and olive oil.
- Season and reduce to a smooth puree.
- For a creamier pesto, drizzle in the olive oil.
For assembly:
- Toast your bread.
- Spread a good layer of pesto.
- Spread out the tomatoes and cheese.
- Finish with a drizzle of balsamic glaze.
