Sauce verte crémeuse

Creamy green sauce recipe, excellent with chicken or pasta.

INGREDIENTS

  • 1 cup of broccoli florets
  • 1 half onion, roughly chopped
  • 1 cup of spinach
  • 1 cup of vegetable broth
  • 1/4 cup unsalted cashew nuts
  • 1/4 cup grated Parmesan
  • 2 tbsp plain Greek yogurt
  • 2 tbsp mild extra virgin olive oil

PREPARATION

  1. Boil the broccoli and onions in the vegetable broth until fully cooked and set aside.

  2. Sauté the spinach over high heat in theolive oil.

  3. Dry roast the cashew nuts.

  4. Mix all the ingredients in a food processor until smooth sauce is obtained.

  5. Add the Greek yogurt and mix well.
