- 2 cups cooked and cooled basmati rice (ideally, use rice cooked the day before)
- 2 chicken breasts, diced
- 2 cloves of garlic, finely chopped (or if you need a low-FODMAP version, replace the garlic with garlic-infused olive oil)
- 1 onion, thinly sliced (or omitted for the low-FODMAP version)
- 3 tablespoons vegetable oil
- 1 carrot, cut into small dice
- 1 red bell pepper, cut into strips
- 1 cup frozen peas

Sauce:
- 3 tablespoons of soy sauce (gluten-free)
- 2 tablespoons oyster sauce (gluten-free option: make sure to use a certified gluten-free oyster sauce)

Add the diced carrots, red bell pepper strips and frozen peas to the pan (Well, at our place, don't look for the peppers — a family member doesn't like them at all... instead I used colorful Nantes carrots). Sauté the vegetables for a few minutes until they are slightly tender.

Push the vegetables to the side of the pan and add 1 tablespoon of vegetable oil to the center. Pour the beaten eggs into the hot oil and stir quickly to cook them until they form small curds.

Add the cooked rice to the pan and stir it

Pour the prepared sauce over the rice and vegetables in the pan. Also add the reserved diced chicken. Mix all the ingredients together carefully, making sure the sauce evenly coats each grain of rice and every piece of chicken.
