Salmon, Strawberry, and Basil Tartare
Ingredients - 4 Starter Servings
- 1 fillet of extra fresh salmon, 500 g, skin removed
- 150 g of ripe, fresh strawberries, diced
- 2 tbsp basil-infused olive oil
- 1 tbsp chipotle-infused olive oil
- 2 tbsp lime juice or more, to taste
- 2 tbsp fresh chives, chopped
- 2 tbsp fresh basil, finely chopped
- A pinch of Espelette pepper (optional, adds a kick to the tartare)
- A little salt
Preparation
20 to 25 minutes
- Dice the salmon and strawberries into small pieces,
- Add all the tartare ingredients.
- Mix well.
Serve in a verrine or on a spoon, on a plate over a bed of salad, or shaped using a mold with fried wontons.
