Tartare de saumon fraises et basilic

Salmon, Strawberry, and Basil Tartare

Ingredients - 4 Starter Servings

  • 1 fillet of extra fresh salmon, 500 g, skin removed
  • 150 g of ripe, fresh strawberries, diced
  • 2 tbsp basil-infused olive oil
  • 1 tbsp chipotle-infused olive oil
  • 2 tbsp lime juice or more, to taste
  • 2 tbsp fresh chives, chopped
  • 2 tbsp fresh basil, finely chopped
  • A pinch of Espelette pepper (optional, adds a kick to the tartare)
  • A little salt

Preparation
20 to 25 minutes

  1. Dice the salmon and strawberries into small pieces,
  2. Add all the tartare ingredients.
  3. Mix well.

Serve in a verrine or on a spoon, on a plate over a bed of salad, or shaped using a mold with fried wontons.
