Here is a very simple one, and honestly delicious!
Ingredients: (for 8 to 10 bars)
- 1 cup ofraw almonds
- 1 cup of pitted dates
- 1/2 cup of rolled oats
- 1/4 cup of honey or maple syrup
- 1/2 teaspoon of vanilla extract (optional)
Instructions:
- Preheat the oven to 350°F (180°C).
- Spread the almonds on a baking sheet and bake in the oven for 8 to 10 minutes until they are lightly golden and fragrant. Let cool.
- In a food processor, blend the almonds until you achieve a coarse texture.
- Add the pitted dates (pit them if they are not already pitted, and I prefer to cut them into pieces beforehand to avoid overworking the food processor), the rolled oats, the honey or maple syrup, and the vanilla extract (if you use it). Blend until the ingredients are well combined and the texture is sticky.
- Transfer the mixture into an 8-inch (20 cm) square pan lined with parchment paper. Press the mixture firmly into the pan.
- Refrigerate everything for 30 minutes to an hour, then cut into bars.
- Store the energy bars in an airtight container in the refrigerator for one week.
