Are you looking for another good energy bar idea? A nice homemade snack?
Maybe you'd like to make it with your kids?
Here is a very simple and honestly delicious one!
Ingredients: (for 8 to 10 bars)
- 1 cup raw almonds
- 1 cup pitted dates
- 1/2 cup rolled oats
- 1/4 cup honey or maple syrup
- 1/2 teaspoon vanilla extract (optional)
Instructions:
- Preheat the oven to 350°F (180°C).
- Spread the almonds on a baking sheet and roast them in the oven for 8 to 10 minutes until lightly golden and fragrant. Let cool.
- In a food processor, blend the almonds until you get a coarse texture.
- Add the pitted dates (pit them if they aren’t already, and I prefer to cut them into pieces beforehand to avoid overworking the food processor), the rolled oats, honey or maple syrup, and vanilla extract (if using). Blend until the ingredients are well combined and the texture is sticky.
- Transfer the mixture to an 8-inch (20 cm) square pan lined with parchment paper. Press the mixture firmly into the pan.
- Refrigerate for 30 minutes to an hour, then cut into bars.
- Store the energy bars in an airtight container in the refrigerator for up to a week.
This recipe is a fun and delicious way to incorporate raw almonds into a nutritious snack for kids. Enjoy!
