Here is a very simple, and frankly delicious!
Ingredients: (for 8 to 10 bars)
- 1 cup ofraw almonds
- 1 cup of pitted dates
- 1/2 cup rolled oats
- 1/4 cup honey or maple syrup
- 1/2 teaspoon vanilla extract (optional)
Instructions :
- Preheat the oven to 350F (180C).).
- Spread the almonds on a baking sheet and bake for 8-10 minutes until lightly browned and fragrant. Let cool.
- In a food processor, pulse the almonds until you get a grainy texture.
- Add the pitted dates (pitted them if they are not, and I prefer to cut them into pieces beforehand so as not to work the robot's motor too much), the oats, the honey or the maple syrup, and vanilla extract (if using). Blend until the ingredients are well blended and the texture is sticky.
- Transfer the mixture to an 8-inch (20 cm) square pan lined with parchment paper. Firmly press the mixture into the mold.
- Refrigerate for 30 minutes to an hour, then cut into bars.
- Store the energy bars in an airtight container in the refrigerator for one week.
