From autumn to spring, I make a broth a week. I love to drink a hot cup after meals.⠀⠀⠀⠀⠀⠀
Cook 1 chicken carcass in 4-6 L of water for 3-4 hours over low heat.
To start, add 2 tablespoons of organic apple cider vinegar, to draw more minerals from the bones.⠀⠀⠀⠀⠀⠀⠀⠀⠀
Bring to a boil. Remove the scum while boiling with a spoon.⠀⠀⠀⠀⠀⠀⠀⠀⠀
Then add the fresh herbs of your choice (I love parsley with rosemary) as well as pink Himalayan salt.⠀⠀⠀⠀⠀⠀⠀⠀⠀
Once boiling, reduce the heat and simmer for 3-4 hours. Cooking time is important. Long cooking over low heat will yield a mineral-dense broth.⠀⠀⠀⠀⠀⠀⠀⠀⠀
You can freeze some of your broth cubes, make a soup or store it in Masson jars following the canning instructions.
