From fall to spring, I make one broth a week. I love to drink a hot cup after meals.⠀⠀⠀⠀⠀⠀
Cook 1 chicken carcass in 4-6 L of water for 3-4 hours, over low heat.
To start, add 2 tablespoons of organic apple cider vinegar to remove more minerals from the bones.⠀⠀⠀⠀⠀⠀⠀⠀⠀
Bring to a boil. Scoop out the foam while boiling with a spoon.⠀⠀⠀⠀⠀⠀⠀⠀⠀
Then add any fresh herbs of your choice (I love parsley with rosemary) and some pink Himalayan salt.⠀⠀⠀⠀⠀⠀⠀⠀⠀
Once boiling, reduce heat and simmer 3-4 hours. Cooking time is important. Long cooking over low heat will give a mineral dense broth.⠀⠀⠀⠀⠀⠀⠀⠀⠀
You can freeze some of your stock in cubes, make a soup or keep it in Mason jars by following the canning instructions.
