Soupe à la tomate Vegan, Sans Gluten et Sans Produits Laitiers

Full of flavor, this soup perfectly replaces the famous cream of tomatoes. It's super easy to prepare, healthy, and is sure to add to your repertoire of comfort food and recipes to eat regularly.

I chose to use MCT cooking oil. MCTs are found naturally in coconut oil, but MCT oil contains 6 times more than coconut oil. They are an exceptional source of muscle and brain fuel. And it is compatible with the ketogenic and paleo diet.

  • 1 teaspoon ofMCT cooking oil (or olive oil for cooking)
  • 1 small onion, diced
  • 1 stalk of celery, diced
  • 3 garlic cloves, minced
  • 1 medium sweet potato, peeled and diced
  • 2 cans (796 mL) crushed tomatoes
  • 2 cups of vegetable broth (gluten free)
  • 2 cups of water (more depending on desired thickness)
  • Salt and pepper to taste
  • 2 cups of cooked brown rice
  • Belsoy soy cream, to taste (optional)
  • Granolust Granola Crunchy Rosemary with Parmesan Vegan, as a garnish.


Heat the oil in a pot over medium-low heat. Add the onion, celery and garlic and sauté for 5 minutes.

Add the sweet potato, diced tomatoes, vegetable broth, water, red pepper flakes, salt and pepper. Bring to a boil and simmer for 20 to 30 minutes or until the sweet potatoes are tender.

Add brown rice, cook until rice is heated through.

Puree the soup with a mixing arm until the desired consistency is achieved, adding more liquid if the soup is too thick. If you are using a blender, remember to hold the lid with a cloth as the heat just might cause the lid to pop ... you don't want to have a tomato soup explosion in the kitchen!

If you want to have a cream of tomatoes, while being vegan, you can add Belsoy cream, to taste, by returning the tomato soup to the cauldron, and leaving to cook over low heat for 1 minute. You don't want to boil it, so that the soy cream does not separate.e.

Serve in pretty bowls, and garnish with Crunchy Rosemary and Vegan Parmesan Granola Granola.
